I love me some tacos and I am still eating low carb, so I stumbled on this recipe for low carb taco pie that called for eggs. It is almost like a Mexican quiche! It is delicious and I have cooked it for dinner and breakfast.
Ingredients:
1 lb ground beef
3 tbsp taco seasoning or one packet taco seasoning
6 large eggs
1/2 cup heavy cream
2 cloves garlic minced
1/2 tsp salt
1/4 tsp pepper
1 cup shredded cheese
Instructions:
Preheat oven to 350F and grease a glass/ceramic 9-inch pie pan or a medium corning ware or casserole dish.
Brown ground beef, add taco seasoning and water, reduce heat until sauce is thickened.
Spread beef in prepared pan or dish.
In a large bowl, combine eggs, cream, garlic, salt and pepper. Pour over beef.
Sprinkle with shredded cheese and bake 30 to 35 minutes, or until the center is set and the cheese is melted.
Let sit for 5 minutes before serving.
Top with sour cream, tomatoes, avocado, hot sauce if desired. (I add sour cream and hot sauce!)
Serves 8 people and each serving has 2 carbs and 302 calories.
